Firstly, great great grandmother worked as courtesan in the palace during king rama v, and her main job was cooking. She experienced, and had knowledge of cooking, especially all kind of thai traditional chilli paste, and crushed chilli with shrimp, crab, fish, pork, etc in order to have a variety of tastes for the royal members.
